Brownie Moose Tracks Berry Crisp in a Mini Cast Iron Skillet

Instructions:

Preheat oven to 350°F.

In a medium bowl, mix 2 cup berries with 2 tbsp sugar. If you’re using frozen, thawed berries, strain them with a fine mesh strainer before adding in your sugar.

In another bowl, whisk 1/3 cup OJ and 2 tsp cornstarch until smooth, then add the mix to the berries and stir.

Pour half of the berry mixture into one mini skillet and the rest into the other skillet and set aside.

To make the topping, in a medium bowl, mix ¼ cup all-purpose flour, 2 tbsp brown sugar and pinch of kosher salt. Add your softened butter and mix with a fork until the mixture is chunky. Toss in ¼ cup of rolled oats and mix with your hands.

Divide the topping in two and crumble over each of the skillets.

Place the mini skillets on a baking sheet before placing in the oven. Bake for 20-25 minutes or until the topping is browned and fruit is bubbling.

Once finished, let the crisp cool for a few minutes. When ready to serve, top each skillet with two scoops of Brownie Moose Tracks.

1/3 cup orange juice

2 tsp cornstarch

¼ cup unsalted butter, slightly softened

¼ cup rolled oats

4 scoops Brownie Moose Tracks ice cream
